Yellow Tea

Yellow tea is a lightly oxidized tea defined by a special step called "sealed yellowing". After pan-firing and rolling, the warm leaves are gently wrapped and rested, turning both leaf and liquor a soft yellow. The aroma is clear and pleasant, and the taste is smooth and mellow, with less briskness than green tea. Classic examples include Junshan Yinzhen, Huoshan Huangya and Mengding Huangya. Yellow tea is made in small quantities, which makes it a rare find.
