White Tea

White tea is a lightly oxidized tea, made simply by withering and drying the leaves, with no pan-firing or rolling. The leaves are covered in fine silver down and brew a pale golden cup with a downy, honeyed aroma and a soft, clean sweetness. Fresh white tea tastes crisp and light, while aged white tea grows rounder and mellower over the years. Classic examples include Silver Needle, White Peony, Shou Mei and Gong Mei.
